Job Description

The Chief Steward is responsible for leading and managing all stewarding operations to ensure a clean, safe, and efficient kitchen environment. This includes the maintenance and sanitation of all kitchen areas, proper handling of equipment, utensils, and tableware, and ensuring compliance with hygiene and food safety standards. The role works closely with the Culinary and Food & Beverage teams to support seamless daily operations and uphold the highest cleanliness and hygiene standards across all outlets.


Key Responsibilities:


  • Supervise and coordinate all activities of the stewarding team across all kitchens and outlets.


  • Ensure thorough cleaning and sanitization of kitchens, dishwashing areas, and equipment at all times.


  • Maintain and control the use of cleaning materials, detergents, and chemicals in accordance with safety standards.


  • Guarantee full compliance with HACCP guidelines and hotel hygiene and sanitation policies.


  • Oversee waste management and recycling programs in line with sustainability goals.


  • Ensure proper storage, organization, and rotation of kitchen equipment and utensils.


  • Monitor and maintain all stewarding equipment, ensuring timely maintenance and minimal downtime.


  • Collaborate closely with Culinary and Food & Beverage teams to provide consistent support during service and events.


  • Train, motivate, and supervise stewarding colleagues to ensure efficiency, teamwork, and a high level of morale.


  • Conduct regular inspections and prepare reports on maintenance needs, performance, and hygiene status.


  • Participate actively in departmental meetings and contribute to operational improvements.



Qualifications

  • Minimum of 3 to 5 years’ experience in a similar role within a luxury hotel or resort.
  • In-depth knowledge of cleaning procedures, chemical handling, and operation of dishwashing systems.
  • Certified in food hygiene and safety.
  • Strong leadership, organizational, and problem-solving skills.
  • Excellent communication and interpersonal abilities.
  • Ability to work effectively under pressure and in a multicultural environment.
  • Proficiency in English required; Arabic is an advantage.
  • Flexibility to work various shifts, including evenings, weekends, and public holidays.
